Chocolate Italian Love Cake



1 package chocolate cake mix (I recommend using Betty Crocker brand), and the ingredients needed to make the cake according to the package
2 lbs. ricotta cheese
4 eggs
¾ cup sugar
1 tsp. pure vanilla extract
1 (5.1 oz.) package instant chocolate pudding mix
1 cup cold milk
8 oz. Cool Whip
How to make it
Preheat your oven to 350*F and spray a 9x13 inch pan with nonstick spray.
In a large bowl, mix together your cake mix according to the directions on the box. Set aside.
In another bow, using a hand mixer, beat together the ricotta cheese, eggs, sugar, and vanilla until smooth.
*The following directions are correct. The layers switch during the baking time!
Pour the cake batter into the prepared baking dish. Spread to fill the pan evenly. Once the cake batter is in place, carefully pour the cheese mixture evenly over the top of the cake batter. Spread to cover the cake batter as best as you can.
Bake the cake at 350* for 1 hour. Remove from the oven and allow to cool completely before frosting.
Once the cake is cool, stir the pudding mix and milk together with a whisk until combined. Carefully, fold the Cool Whip into the pudding until combined.
Spread the pudding mixture over the top of the cooled cake. Cover the cake and refrigerate at least 6 hours before serving. It tastes even better the next day.

BANANA PUDDING FROM SCRATCH recipe




1/2 c. sugar
2 tbsp. flour
1/4 tsp. salt
2 c. milk
4 separated eggs
1 tbsp. vanilla flavor
1 box of Nilla Vanilla Wafers
4 med. ripe bananas

How to make this recipe


First step : Mix flour, salt, and sugar; add milk slowly. Stir constantly over low heat until thickened. Stir and cook for about 15 mins. Beat egg yolks in bowl and stir into mixture slowly stirring constantly.
Second step : Cook about 5 more minutes stirring constantly. Remove from heat and add vanilla. Line bottom of casserole dish with vanilla wafers, bananas (sliced) and custard mixture. Repeat layers, ending with custard on top.
Finally step :  Beat egg whites until stiff. Add 1/4 cup sugar; whip until it peaks. Spread on top of custard and bake in oven at 450 degrees for about 5 mins or until browned. Remove from oven and serve.

Condensed Milk Pound Cake



1 1/3 cups all purpose flour
3/4 teaspoon baking powder
1/2 cup sugar
1 cup (2 sticks) unsalted butter, at room temperature, plus more for greasing the pan
1 teaspoon salt
3/4 cup sweetened condensed milk
3 large eggs
1 teaspoon vanilla extract

Preheat oven to 325°F. Generously butter 9×5 loaf pan and set aside.
Stir the flour and baking powder together in a small bowl and set aside. Fit your food processor with the blade attachment and add the sugar, butter, and salt to the bowl. Process until light and fluffy, about 2 minutes, scraping down the sides and bottom of the bowl occasionally. Add the condensed milk and pulse until well incorporated, about 15 times, scraping down the sides of the bowl once. Add the sifted dry ingredients and pulse until no traces of flour remain, about 10 times. Add the eggs and vanilla, and pulse just until combined, about 5 times. Scrape down the sides and bottom of the bowl and finish mixing by hand to fully incorporate the eggs.
Transfer the batter to the prepared loaf pan. Bake until the top is dark, golden brown and a tester inserted in center comes out clean, about 1 hour. Cool in pan on a wire rack for ten minutes, then unmold and allow to cool completely on the rack, bottom-side down.

Taco Meatloaf



1 pound raw extra-lean ground turkey (I used extra lean ground beef)
2 slices of fat-free cheddar cheese (I used Reduced Fat Pepper jack cheese_
1/2 cup shredded fat-free cheddar cheese (again, I used reduced fat. Fat Free Sucks)
1/2 cup canned sweet corn kernels
1/4 cup chopped green bell peppers
1/4 cup chopped onions
1/2 cup salsa
1/2 packet of taco seasoning mix, dry (I used the whole packet)


How make it:

Preheat oven to 375 degrees
Cook peppers and onions for three minutes over medium heat in a pan sprayed with non-stick spray
In a large bowl, combine onions and peppers with turkey, corn and seasoning mix. Spread half of the mixture evenly into the bottom of the loaf pan (about 9″x5″) sprayed with nonstick spray.
Layer the two slices of fat-free cheese on top of the mixture (try to keep slices away from the pan’s edges). Evenly top with the remaining meat mixture.
Pour the salsa over the top of the loaf. Cook in the oven for 30 minutes.
Top loaf with shredded cheese. Return loaf to the oven and cook for another 15 minutes.

Peanut butter cookies (2 ingredients)



- 2 eggs
- 2 cups of peanut butte

How to make this recipe

First Step : Mix 2 eggs and the 2 cups of peanut butter. Thereafter use an electric mixer to make the batter smooth. Take the mixed in your hand, roll it in your hands until it has become a smooth and soft ping pong boll size and place it on the baking tray with some non stick baking paper. Use a fork to flatten the pong shaped cookies

Second Step :  Preheat oven for 5-6 mins, then place the cookies in your oven on 180-190 degrees Celsius for 10-20 mins depending on your oven or until the cookies are nice and firm. When you take them out you need to let them cool for about 10 mins. Because when you let them cool they'll harden up.

Easy Scalloped Potatoes Recipe


8-10 medium potatoes (Russet or Yukon Gold are best)
¼ cup cold butter, cut into small squares
2 Tbsp. flour
2 cups shredded cheddar cheese, divided (old or medium cheddar is best)
2 cups milk (I used 2%)
1 tsp. coarse salt
1 tsp. dried mustard or paprika


How to make it :

  Wash, peel and thinly slice potatoes.
Butter 9 x 13 casserole dish.
Layer 1/3 potatoes, 1/3 butter, 1 tbsp. flour and 1/3 cheese.
 Repeat (potatoes, butter, flour, cheese).
 Follow with final layer of potatoes and top with remaining 1/3 butter.
 In bowl mix milk, salt and mustard and pour over top of potatoes.
 Cover with tin foil and bake in preheated 350F oven for 1 – 1.5 hours until potatoes are soft and bubbly.
 Sprinkle with remaining cheese and bake uncovered for another 15-20 minutes.
  Serve with your favourite entrée like this Slow Cooker Balsamic Maple Glazed Ham and enjoy!

7-UP Moist Cake




1 Box Yellow Cake Mix
1 (4 oz.) Box Instant Lemon Pudding
1 1/2 Cups 7 Up
4 Eggs
3/4 Cup Vegetable Oil
Icing:
2 Cups Confectioners Sugar
1 Tbsp. Lemon Juice
1-2 Tbsp. Milk

How to make this recipe

First step : you need to Preheat oven to 325F degrees.
Second step : Spray your 10-inch bundt pan with nonstick cooking spray. In a medium bowl, combine all the cake ingredients. Mix until thoroughly combined. Pour batter into bundt pan.
Third step : Bake for about 45-55 mins (until inserted toothpick or fork comes out clean). Allow to cool completely, then remove from bundt pan.
Step 4 : Start preparing icing. If you’re using a fresh lemon, you might like to zest a bit of the lemon for more flavor. That step is totally optional. In a small bowl, combine sugar and lemon juice. Add milk in slowly until you’ve reached desired consistency. You may want your icing a bit thicker or more like a glaze. That part is completely up to you. This icing is nice and tangy and brings a nice balance of flavor alongside the sweet cake.
Pour icing over cake. And serve!

:Easy salsa recipe




6 tomatoes
3 jalapenos (warning: hot)
1 medium white onion
1/2 a medium red onion
1 cup cilantro (I’m a fiend- so a little less if you aren’t)
5 cloves garlic
3 limes juice (hell, I even threw in some of the pulp)
1 tbsp cumin
1 tsp sea salt (More can always be added but not taken away!)
1 tsp chili powder

How to make this recipe

First of all you need 1 cup (2-3 ears) of grilled/pan fried corn. If pan frying it, try putting in 3 tbsps of pineapple juice & 2 tbsp EVOO. Since you are using pans now, I would probably add the garlic, salt, 1/2 the cilantro, cumin & chili powder now.
Sweeten it up with some diced fruit of your choice- pineapple, mango, peach etc.

Parmesan Crusted Chicken with Bacon


1/2 tsp salt
1-1 1/2 cups shredded Asiago cheese – for melting on top
3-4 slices bacon – cooked and crumbed (can leave slightly under-done, it will finish cooking under broiler)
1 egg beaten
1 tablespoon water
Oil for frying – about 1/2 – 3/4 cup depending on size of skillet
4 boneless skinless chicken breasts – about 4-5 oz each
1 cup grated Parmesan cheese 
1/4 tsp garlic powder
1/4 tsp pepper
Preheat oven to 350 degrees
In a small shallow bowl, mix egg and water

In another shallow bowl, mix Parmesan cheese, pepper, salt and garlic

Heat oil over high heat

Dip each chicken breast first in egg mixture then in cheese
*Note:  If oil isn’t hot enough your crust may stick to the bottom of the pan and you’ll lose it all*

Fry in hot oil until crust is golden brown

Prepare a baking pan by covering with foil and placing wire rack on top

Place chicken on rack and bake about 20 minutes or until juices run clear

Time will depend on thickness of chicken

Remove from oven and turn oven to broil

Top each piece of chicken with Asiago cheese and bacon and place under broiler to melt cheese

Southern Fried Pickles



First  the sauce:
You need 1/4 cup of mayonnaise
And also one  tablespoon drained horseradish
Two tsp of ketchup
Finally you need 1/4 teaspoon of Cajun seasoning
For the pickles:
Peanut or vegetable oil , for frying
Half  cup of all-purpose flour
And 1 3/4 teaspoons Cajun seasoning
Then half tsp of Italian seasoning
1/4 teaspoon cayenne pepper
And Kosher salt
Finally you need  two cups sliced dill pickles, drained

How to make this recipe :

First step to prepare this recipe is to make the sauce:  so first mix the mayonnaise, horseradish, ketchup & Cajun seasoning in a bowl; Then set aside.

For fry the pickles: So heat one inch peanut oil  in a pot over medium-high heat till a deep-fry thermometer registers 375  F. At the same time, whisk the flour, Cajun seasoning, Italian seasoning, cayenne pepper , half  tsp salt and half  cup of water in a large bowl till smooth. Spread the pickles on paper towels & pat dry.

Second step : Now add 1/2 of the pickles to the batter then toss to coat.  Then remove from the batter using a slotted spoon, letting the excess drip off, & add to the oil one at a time. Fry till golden brown, between 1 - 2 mins; remove with a slotted spoon & drain on paper towels. Return the oil to 375 F then repeat with the remaining pickles & batter. Serve immediately with the prepared sauce. And enjoye !!!

Southern Fried Chicken Batter.

First you need two beaten of egg
And also one cup of milk
Then two tsp of paprika
Half tsp of poultry seasoning
And 4 ts garlic salt
Two tsp of black pepper
Finally two cup of all-purpose flour

How to make this recipe :
First step to prepare this delecious recipe is to beat the egg & milk together in a bowl. Then mix the flour with the garlic salt, pepper, poultry seasoning & paprika in a big plastic bag.
Second step : Now place the chicken in the bag, seal it & shake to coat it.
Next dip the flour-coated chicken in the egg mixture & again in the flour mixture.
Step 3 : now heat the oil in a skillet to 365 F. Brown the chicken on all sides in the hot oil.
And make sure to turn the heat down to medium low & give the chicken another 1/2 an hour or till it is cooked through.
Finally drain it on paper towels & serve

Butter Cake




2 1/3 sticks (total of 250g) unsalted butter, at room temperature
7 oz (200g) plain flour/all purpose flour
1 tsp baking powder
7 oz (200g) castor sugar
4 eggs
½ tsp salt
4 tablespoons fresh milk or yogurt
1 teaspoon vanilla essence

How to make it :

1. Preheat the oven to 375°F.
2. Lightly grease the pan (loaf pan, mini loaf pan, 8×8, or 9×9) with some butter.
3. Mix the flour and the baking powder together and sieve. Add in salt and mix well. Set aside.
4. Use an electronic beater to mix butter and sugar until well combined or pale yellow in color. (Note: Sugar has not dissolved yet).
5. Add in the first egg. Beat well after each addition of egg until creamy.
6. Scrape down the sides for even mixing.
7. Add in vanilla essence and mix well.
8. Fold in the flour into the mixture and mix well.
9. Finally, add in the milk/yogurt.
10. Pour the mixture into the greased baking pan. Shake it lightly to distribute cake mixture evenly.
11. Bake until golden brown and cooked, about 40 minutes. Use a cake tester to test if it’s cooked.
12. Remove it from the oven and let cool on the wire rack for another 5 minutes. Serve warm

Twice Baked Potato Casserole


7 medium red potatoes - baked
1/4 tsp salt and pepper
1 lb bacon, cooked and crumbled
3 c sour cream
2 c mozzarella cheese, shredded
2 c cheddar cheese, shredded
3 green onion, sliced


How to Make It

Cut baked potatoes into 1 inch cubes. Place half in a greased 13 x 9 baking dish.
Sprinkle with half the salt,pepper and bacon.
Top with half the sour cream and then the cheeses. Repeat layers.
Bake uncovered at 350° for 20-25 minutes or until cheeses are melted. Sprinkle with the sliced onion.

recipe :old fashioned custard pie


1 unbaked pie shell (I use Marie Callendar's deep dish)
3 large eggs
1/2 cup of sugar
1/2 teaspoon of salt
1/2 teaspoon of nutmeg
2-2/3 cups of milk
1 teaspoon pure vanilla extract

instructions :

Beat your eggs slightly, then
Pre-heat the oven to 350 degrees.
add sugar, salt, nutmeg, and milk.
Beat well and poor into the unbaked pie shell. Bake for 35 to 40 minutes.
Remove from oven and cool.
Sprinkle the top of pie with fresh ground nutmeg and serve.
